I don't have another explanation to offer. But in answer to "if some matter escapes through the poles what gives it the ordered "jet" configuration?"
My guess is that the spin of the black hole is so rapid that it creates an enormous increase in the "dark matter" gravitational effect. However, two points on the surface of the black hole lie on the axis of rotation and as such do not experience the extra gravity. And so, as matter gets squeezed as it is pulled in, some of it is forced out through points on the poles because gravity is weaker there (the matter gets converted into radiation before being forced out through points at the poles).
I guess the faster the black hole rotates the narrower the jets become, and the strength of the jets depends on how active black hole is.

still how do you get "jets" at either pole?
a blackhole draws matter down one pole,so the other pole is producing a jet is possible but not at both ends.

What is the frequency and flux of the jets? That should be considered as a first step if you want to really understand the structure. If you like cartoons then enjoy.

instead of being drawn to "cartoons" it would be better if you looked at photos it tends to be more REAL[]

An accretion disc forms around the black holes that heats up and gives out x-rays. In this area, matter gets changed and some of it gets out via the poles.
Even though the force on the poles pulls it down, the squeeze effect cause by pressure build-up in the accretion disk drives it out at both ends - hence the jets.

sorry does not work for me,in a blackhole the gravitational pull is so strong that not even light can escape, no matter this accretion disk pressure it won't over-ride the gravitational pull and it's vortex goes down to singularity,which means at one pole one jet would be upside down(^) this is not observed.also the jets would be observed begining in the accretion disc as moves to poles which is also not observed.
